Herbed-Potato Frittata |
2 cups of diced red potato 1 tablespoon reduced calorie stick margarine 1/3 cup of sliced green onion 1 teaspoon fresh basil ½ teaspoon dried marjoram ¼ teaspoon of salt ¼ teaspoon of black pepper 1 garlic glove, minced 2 (8 ounce) cartons egg substitute ¾ cup (3 oz) shredded reduced-fat sharp cheddar cheese |
1. Place potato in a saucepan; add water, cover, and bring to
a boil. Cover, reduce heat and simmer for 20 minutes or until tender;
drain Yield 4 servings each containing:193 calories, 5.9g fat, 19.5g protein, 15.5g carbohydrates |
