Recipe of the Month

Herbed-Potato Frittata
2 cups of diced red potato
1 tablespoon reduced calorie stick margarine
1/3 cup of sliced green onion
1 teaspoon fresh basil
½ teaspoon dried marjoram
¼ teaspoon of salt
¼ teaspoon of black pepper
1 garlic glove, minced
2 (8 ounce) cartons egg substitute
¾ cup (3 oz) shredded reduced-fat sharp cheddar cheese

1. Place potato in a saucepan; add water, cover, and bring to a boil. Cover, reduce heat and simmer for 20 minutes or until tender; drain
2. Melt margarine in a 10-inch nonstick skillet over medium-high heat. Add potato, onion, and next 5 ingredients; sauté 2 minutes. Spread potato mixture evenly in skillet.
3. Pour egg substitute over potato mixture; reduce heat to medium-low. Cook uncovered for 8-10 minutes or until almost set.
4. Preheat boiler.
5. Wrap handle of skillet with foil; broil 3 minutes. Sprinkle with cheese and broil 30 seconds or until cheese melts.

Yield 4 servings each containing:193 calories, 5.9g fat, 19.5g protein, 15.5g carbohydrates
